Incorporating the Fall season and the events around this time such as Thanksgiving Day (October 10), World Food Day (October 16) and Halloween (October 31), Casa West baked some zucchini raisin cookies. The children enjoyed having them for a special afternoon snack. They were soft and delicious!
Autumn Cookies
½ cup butter
1 cup sugar
1 egg
½ teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking powder
2 cups flour
½ cup raisins
1 cup grated zucchini
red, yellow, orange food colour
1. Cream together butter and sugar. Mix in egg.
2. Divide the egg mixture into three. Add a different food colour for each.
3. Mix together salt, cinnamon, baking powder and flour. Divide into three and stir with the egg mixture. Add more food colour if needed.
4. Divide raisins and zucchini in three and add to each coloured dough.
5. Drop by tablespoons onto greased cookie sheets. Bake at 375°F about 12 minutes, until tops and bottoms are barely browned. Makes 30 cookies.
