Easy Tortilla Bean and Chicken Casserole

Tortilla Bean and Chicken Casserole
Simone makes this easy and delicious Tortilla Bean and Chicken Casserole that is a Simcoe Place favourite! We hope you enjoy it with your family!
2 lbs ground chicken
1 can red kidney beans, drain and rinse
1 can white kidney beans, drain and rinse
1 can corn, drain and rinse
2 cans diced tomatoes, drained
1 tsp cumin
1 tsp cinnamon
1 tsp cocoa powder
2 tbsp chili powder
2 green peppers, diced
1 medium onion, diced
2 packs small whole wheat tortillas, diced and toasted in the oven on a cookie sheet
4 cups shredded cheddar cheese
In a large pot, brown the chicken and drain the fat. Add peppers and onions and continue to saute. Add tomatoes and spices. Simmer 15 minutes. Add beans and corn, simmer 5 minutes. In a large bowl, layer tortillas, chicken mix, cheese and repeat.
Can be served right away or reheated and served later.
