Introducing Melanie, our new chef. Melanie makes a delicious Jerk Chicken along with rice and beans that the children enjoy. Here is a modified recipe for a family size meal. Please adjust to your family’s taste:
Jerk Chicken Recipe
1 – 1.75 Kgs chicken, washed and cut
Jerk Seasoning:
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Dried Thyme
1 tsp Dried Parsley
1 Tbsp Sugar
1 tsp (Kosher) Salt
1 tsp Paprika
1 tsp Allspice
½ – 1 tsp Pepper
½ tsp Nutmeg
½ tsp Cinnamon
Pinch of Cayenne
¼ C Oil
1/4 C Tbsp White Vinegar
Method:
Stir all ingredients together into a paste and baste/rub onto the meat. Let marinate for half an hour to overnight. Broil in an oven or barbecue, turning every 5 – 10 minutes. Enjoy!
