Amalia from our West Casa classroom and her partner are enjoying baking together. Making this loaf is great family fun and delicious too!
Ingredients:
- 4 medium ripe bananas, mashed
- 1 tsp vanilla extract
- 1/4 C sunflower butter
- 2 eggs
- 1/2 C coconut flour
- 3/4 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 C chocolate chips, (dairy free if desired) plus extra for sprinkling on top
- ½ C dried coconut
- 1 tsp of cocoa powder
- 1 tsp of honey
Method:
- Preheat oven to 350 degrees F/177 C.
- Line an 8×4 inch or 9×5 inch loaf pan with parchment paper.
- In the bowl of an electric mixer or in a regular bowl, combine bananas, vanilla, sunflower butter, eggs; mix until well combined, smooth, and creamy.
- Add in coconut flour, baking soda, cinnamon and salt, cocoa and coconut. Gently fold in chocolate chips.
- Pour batter into prepared pan and smooth top. Bake for 25-35 minutes or until tester inserted into center comes out clean.
- Remove from oven and carefully carry loaf out of pan holding edges of parchment paper.
- Let cool and enjoy!
