Congee with Tilapia, Corn, and Broccoli

Ingredients

  • 1/2 cup of jasmine rice
  • 5 cups water or fish stock or vegetable stock
  • 2 tilapia fillets
  • 1 cup finely chopped broccoli florets
  • 2 cups frozen corn kernels
  • some salt

Directions

  1.  Put the water or stock and rice into a covered pot, bring to a boil, then reduce to a simmer until rice is completely broken, approximately 2 hours.
  2. Broil the tilapia fillets until done (flakes easily with a fork), 5-10 minutes.
  3. Ten minutes before serving, add the chopped broccoli and corn to the rice. Break up the fish and add it to the rice. Add some salt if needed.
