Regine baked some delicious toffee oatmeal chocolate chip cookies and she wanted to share the recipe with everyone!
Ingredients
1 cup butter, softened
1 cup of brown sugar
2 eggs
2 teaspoons vanilla
1 3/4 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
3 cups old fashioned oatmeal
3/4 – 1 cup toffee bits
3/4 cup milk chocolate chips
Instructions
Heat oven to 350°F degrees.
In a large bowl, mix the butter.
Mix the butter and brown sugar together until creamy.
Add the eggs and vanilla to the bowl and mix all together.
Add the flour, baking soda, baking powder, and salt until combined.
Mix in oatmeal and toffee bits.
Use a spatula (not a mixer) to add milk chocolate chips.
I like medium size cookies and use a teaspoon to pick up the dough to make round portions. To make larger cookies, you can use a tablespoon or cookie scoop (if available)
Bake for 10-12 minutes for medium size cookies (just until the edges are light golden brown) or 12-14 minutes for large cookies.
Cool cookies on the baking sheet for a few minutes before transferring to containers or wire rack to cool.
