Making Pasta With Susan!

Susan making pasta

Susan has been doing some cooking with her family and would like to share her recipe for rigatoni pasta with an Italian sauce. It looks delicious!

Pasta With Italian Sauce

Ingredients (for four small or two large portions):

4 tablespoons olive oil
1 cup diced onion (red or white onion)
1 teaspoon sea salt, (adjust to taste)
2 – 3 cloves crushed garlic
A pinch of red pepper flakes (optional)
1 can of classic or Ragu red tomato sauce (or any brand)
½ cup water to rinse out of the can of tomatoes
Small handful of basil leaves, left whole or sliced just before adding
1 cup freshly grated parmesan cheese, plus more to top
1 tsp dried oregano
4 tablespoons butter, cubed
8 ounces dry rigatoni

Instructions:

Add boiled water in pot.

Add a pinch of sea salt and 4 tablespoons of olive oil to keep the pasta from sticking.

Add pasta to boiled water and let it simmer for about 15 minutes.

Pour the pot of pasta and water through a colander set in your sink and let it sit there for 5 minutes to get all the water drained out.

In another pot, add olive oil and put 1 cup of diced onion with a pinch of sea salt.

Add 2 – 3 cloves of crushed garlic and stir for about a minute.

Optional – can add red pepper flakes.

Add 1 can of classic or Ragu red tomato sauce – or whichever brand tomato sauce you prefer.

After adding your tomato sauce, to get all the extra sauce of the bottle, you simply add ½ cup of water to rinse out the can of tomatoes.

Stir and adjust heat between medium and medium- low and cook for 45 minutes.

Once 45 minutes has passed, add 4 tablespoons butter, basil leaves, parmesan cheese, and dried oregano to the sauce and stir.

Transfer the pasta into the sauce and toss to coat it well with the sauce.

Taste and adjust seasonings as desired.

Time to serve!
