Brittany, from our Under 2 community, has been busy making Portuguese Biscoitos with her grandmother, and she wanted to share her experience and their family recipe.
Biscoitos are the Portuguese version of a dunking cookie. Originally from the Azores, they are tender on the inside and crispy on the outside. Perfect to dunk in tea/coffee or even just plain old milk. Growing up and living with my Vavó (Grandmother in Portuguese), Biscoitos we’re always in the house to snack on. I’ve always loved eating and making them with her. They are simple, delicious and definitely one of my favourites!
Ingredients you will need:
4 eggs
3/4 cups of white sugar
3 1/2 cups of flour
1/2 tablespoon of baking powder
1 cup of margarine
Step 1 – Mix 4 eggs and 3/4 cups of sugar in a bowl. Mix/beat well until sugar is completely dissolved.
Step 2 – Put 3 1/2 cups of flour into a separate bowl and sprinkle in 1/2 tablespoon of baking powder.
Step 3 – Add the eggs and sugar mixture into the flour.
Step 4 – Fold together to create your dough. You can use a mixing spoon, but we find using your hands works best.
Step 5 – Add margarine to dough and mix together very well.
Step 6 – Cover dough and let it sit in the fridge for 3 hours.
Step 7 – Preheat oven to 350°F.
Step 8 – Time to roll it out!
Take a ping pong ball sized scoop of the dough and roll it between your hands or on a flat surface to create a “snake”. Make sure it is even throughout.
Step 9 – Bring ends of the “snake” together slighting folding one over the other to form a donut shape. Repeat.
Step 10 – Place each biscuit 1-2 inches apart on baking sheet.
Step 11 – Bake for 20-25 minutes or until golden brown.
