Ingredients
- 2 cups whole wheat flour (For this recipe, I mixed whole wheat & white)
- 1½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ tablespoon cinnamon
- 2 cups of chopped strawberries
- 2 large eggs
- ½ cup plain or Greek yogurt
- ⅓ cup coconut oil
- 1 teaspoon vanilla extract
- ½ cup pure maple syrup
Instructions
1. Preheat oven to 350°F and line a muffin pan with liners.
2. In a large bowl, mix dry ingredients; flour, baking powder, baking soda, and cinnamon.
3. Fold in strawberries (put ¼ aside) and stir to coat.
4. In a separate bowl, whisk together eggs, yogurt, coconut oil, vanilla, and maple syrup.
5. Pour wet ingredients to dry ingredients and stir until well combined.
6. Portion batter equally into muffin pan and add the remaining strawberries to the top.
7. Bake for 22-25 minutes or until golden brown.
