Chicken Piccata Milanese with Dorothy!

I miss you all very much and hope that you are doing well.  Here’s a dish that we like to eat at my house.

Chicken Piccata Milanese

1 ½ lb. boneless and skinless chicken breasts, cut lengthwise into ¼”  slices.
3 large eggs
2-3 oz. grated Parmesan cheese
2 oz. milk
½ cup flour
olive oil
salt and pepper to taste

Serves 4-6

Whisk the eggs, cheese and milk together well in a medium-size bowl and set aside.
Place chicken slices between 2 pieces of plastic wrap and flatten slightly with a meat mallet or small heavy pot/pan.
Dredge chicken in seasoned flour (salt and pepper).
Heat large non-stick frying pan with 1-2 tbsp. olive oil to medium-high heat.
Dip chicken in the beaten egg mixture and fry in the pan until golden brown on both sides, 2-3 minutes each side.

You can serve this with whatever sides you wish.  I used pesto pasta with spinach and broccoli. We love our veggies at my house!!
