Coconut Flour Banana Bread With Amalia!

 

Amalia and friend's baked Coconut Flour Banana bread

Amalia from our West Casa classroom and her partner are enjoying baking together. Making this loaf is great family fun and delicious too!

Ingredients:

  • 4 medium ripe bananas, mashed
  • 1 tsp vanilla extract
  • 1/4 C sunflower butter
  • 2 eggs
  • 1/2 C coconut flour
  • 3/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 C chocolate chips, (dairy free if desired) plus extra for sprinkling on top
  • ½ C dried coconut
  • 1 tsp of cocoa powder
  • 1 tsp of honey

Method:

  1. Preheat oven to 350 degrees F/177 C.
  2. Line an 8×4 inch or 9×5 inch loaf pan with parchment paper.
  3. In the bowl of an electric mixer or in a regular bowl, combine bananas, vanilla, sunflower butter, eggs; mix until well combined, smooth, and creamy.
  4. Add in coconut flour, baking soda, cinnamon and salt, cocoa and coconut. Gently fold in chocolate chips.
  5. Pour batter into prepared pan and smooth top. Bake for 25-35 minutes or until tester inserted into center comes out clean.
  6. Remove from oven and carefully carry loaf out of pan holding edges of parchment paper.
  7. Let cool and enjoy!
