Regine made some healthy and delicious sweet potato chips. Delicious!
Baked Sweet Potato Chips
- 1 or 2 sweet potato(es)
- 1/3 cup olive oil
- 1/2 – 1 tbsp dried rosemary
- 1 tsp salt or to taste
- 1 tsp black pepper or to taste
- peeler
- mandolin or knife
Preheat oven to 400°F. Line 2 baking sheets with parchment paper and set aside.
Peel sweet potato(es) and use a mandolin to cut into thin rounds (or thinnest setting).
If you do not have a mandolin, use a knife and cut 1/2 inch thick slices.
Combine olive oil, salt, black pepper, and dried rosemary in a large mixing bowl. Add sliced sweet potatoes and toss to coat.
Spread sweet potato slices on the baking sheets.
If you used a mandolin, bake for 10 minutes on one side then flip and bake again for another 5-7 minutes (or until golden). If you used a knife, bake for 10 minutes on one side then flip and baked again for another 10 minutes. Remove from the oven and cool. They will crisp up a little more as they cool.
